Owner's words
2021 is a vintage full of surprises...especially because of its blend! Even if Cabernets have always been an essential part of Canon La Gaffelière's DNA, in 2021 they account for 65% of the ifnal blend. This is the first time in the history of our winery! Indeed, our Cabernet Franc and cabernet Sauvignon (50% of the planted grape varieties altogether) expressed over the months their full potential and their intrinsic identity. Ripening performed under cool weather conditions, with a very large temperatures range, which enables grapes' skins to refine their tannins. In the cellars, we took over and adopted a smooth winemaking approach, with extractions dispensed precisely to preserve the fruit and very delicate tannins. After 4 months of ageing only, this wine proves to be already very dynamic and gourmet, combining bright aromas and finesse. A multi-dimensional wine showing complex notes of red fruits (slightly acidulous) with floral and spicy aromas (Thank you Cabernet Franc!)
