Organic vinification process adapted to each concrete tank : 8 tanks of Merlot (50hl, 80hl, 105hl), 5 tanks of Cabernet Sauvignon and 1 tank of Petit Verdot. Seeding of 100 % of the harvest with selected indigenous yeasts and lactic bacteria (early co-inoculation). Average fermentation of 10 to 14 days. Two intelligent sprinklers and Air’Pulse system are used for the pumping over in order to optimize the extraction of the marc and the quality of the tannins : 1 volume per day for the first 2 days, then 1/2, then 1/4 around 1050. Total vatting for 19 to 23 days. Vertical press only.
Maturing/ageing : 12 months : 35% new barrels,45% one-year barrels, 20% amphoras
Owner's words
2024 vintage was marked by a mild and wet winter which favored an early and even budburst at the end of March. The cooler spring slowed growth and delayed flowering, which took place in bright sunshine at the beginning of June. Veraison occurred in August, leading to a late harvest in October. Château Fourcas Hosten 2024, which is certified organic, is characterized by the identity of its 2 terroirs. The Merlot and Cabernet Franc grapes produce explosive aromas of red fruit with plenty of freshness on the clay-limestone terroir. The Cabernet Sauvignon and Petit Verdot grapes provide the silky tannic structure and spicy notes on the gravel terroir.
