Vinification
Harvesting, carried out by experienced pickers, requires 3 to 6 passes, to pick the grapes concentrated by “noble rot” at the ideal stage. Extracted by slow pressing, the pure, rich musts ferment in oak barrels that are renewed every quarter. Fermentation is carried out in barrels, separating the harvest from each sort and each plot.
Maturing/ageing : 12 months in barrels
