Vinification
Organic vinification adapted to each 50-105HL concrete vat. Fermentation with selected indigenous yeasts on 25% of the harvest. Average fermentations of 10 to 14 days. Two intelligent sprinklers and the Air'Pulse are used for pumping-over to optimize the gentle extraction of the marc and the quality of the tannins. Total vatting time of 19 to 23 days. Vertical pressing only.
Maturing/ageing : 12 months (40% in new barrels, 45% in one-wine barrels, 15% in amphora)

Tasting commentary
2022 is an exceptional vintage with extreme weather conditions! After a very dry summer with record-breaking temperatures, we enjoyed sufficient rainfall at the end of August for the vines to feed their fruit. Once again, the long Indian summer enabled us to harvest at optimum ripeness. Delicate extraction during fermentation and ageing in barrels and amphorae allowed us to express both very ripe red and black fruit aromas and floral notes of violet. This warm vintage is characterized by a dense, naturally concentrated structure with a silky texture. The finish is elegant, long and fresh. The 2022 vintage will undoubtedly be a benchmark for Fourcas Hosten, with a perfect balance between tannic structure, alcohol and acidity.
